Super Frozen
Reducing the core temperature of tuna to -60°C, reaching its Eutectic Point, halts all cellular activity within the fish. This process arrests natural decomposition, essentially freezing the fish in time. Consequently, the tuna preserves its freshness, taste, and texture over an extended period.
