Sashimi grade yellowfin must be treated with extreme care in order to maintain it's quality. Big Fish tuna slides on food grade stainless steal from boat to our facility five meters away. This reduces high impact fish handling points by up to 70%, resulting in significantly higher quality.

Big Fish cold chain begins the moment our tuna is caught. We produce high grade fresh and salt water ice to ensure our boats have enough for the entire trip. Our cold rooms, blast freezers and frozen store rooms are fitted with sensors, climate control, alarm and redundancy systems to ensure optimal temperature at all times.
