Skipjack tuna (Katsuo), a cornerstone of ancient Japanese cuisine, is renowned as the original sashimi fish. Celebrated for its robust flavor and lean meat, katsuo holds a central place in Japanese culinary tradition, featuring prominently in sashimi and the iconic dish "Katsuo no Tataki" – lightly seared outside, raw within. Beyond these well-known preparations, Katsuo is a versatile ingredient in numerous Japanese dishes, showcasing its enduring role in the nation's rich culinary heritage.

Pole & Line Only

Over 90% of the world's skipjack tuna is caught by purse seiners. This method cannot yield sashimi-quality tuna, as the fish must be processed while fresh on the day of harvest to  maintain grade.

Historically, Japan was the sole producer of sashimi-grade skipjack tuna, sourced entirely from their pole and line fleet and primarily consumed fresh within the local market. They also produce a limited volume of super-frozen skipjack loins in raw and pre-seared form.

Big Fish Maldives is the only company outside of Japan with the capability to produce super-frozen sashimi grade skipjack tuna.

Super Frozen

Lowering the core temperature of tuna to -60°C, also known as its Eutectic Point, causes all cellular activity in the fish to stop.


 This prevents any natural decomposition and effectively suspends the fish in time. As a result, the fish retains its freshness, flavor, and texture for a longer duration.
